For the past couple of weeks, I was living without a fridge and I managed to survive without one. And yes, it was weeks. Eeek. How did I do without one? Well, I cooked small and simple meals (no keeping overnight), which meant doing groceries almost everyday, depending on what I intended to cook that day.

There were so many nice refrigerators to choose from. We particularly liked those 2-door type but none would fit in our kitch — our width is limited to 180 mm – and suppose width wasn’t an issue, we wouldn’t want to spend that kind of money (2K – 3k) on a fridge.

We finally chose this one (with black tempered glass), which matches our current kitchen cabinets (and was on sale). It’s looking pretty empty at the moment

Now that I have a fridge again, I want to give the weekly make-ahead meal a try!

***

What I’m currently loving at the moment is this breakfast-in-a-hurry cake aka 5-minute microwave mug breakfast cake. I’m using a secret ingredient which is making this cake so fluffy and light!

Secret ingredient = smoothie powder (only those with skim milk, vanilin and stabilizer as ingredients) from Phoon Huat (which I recently purchased). I just use a teaspoon of this powder. A little goes a long way.

[Microwave on high for about 2 - 3 minutes]

Yum!

This is my breakfast-in-a-hurry or sometimes a snack-on-the-go :P

Lunch? It has been simple

Monday Lunch – Lentils, hard boiled eggs and greens. I think I want to make <del>curry chicken</del> (edited to add: I made Assam Fish instead) for tonight’s dinner and enough for tomorrow’s lunch.

This cake is SO easy to prepare! Just dump all the ingredients into a food processor and then bake!

***

Old Fashioned Chocolate cake

Ingredients (after halving and editing the original)

100g plain flour

80g caster sugar (original calls for 100g but 80g was sweet enough for my taste)

1/2 teaspoon baking powder

1/4 teaspoon bicarbonate of soda

20g best-quality cocoa

50g unsalted butter + 35g applesauce (original calls for 85g soft unsalted butter)

1 large egg

1/2 teaspoons real vanilla extract

75ml sour cream (I used low fat)

Method

Take everything out of the fridge so that all the ingredients can come to room temperature.

Preheat the oven to gas mark 4/180°C and line and butter one 12 cm spring-form pan – you can use two if you want flatter cakes.

Now all you have to do is put all the cake ingredients – flour, sugar, baking powder and bicarb, cocoa, butter, eggs, vanilla and sour cream – into a food processor and process until you have a smooth, thick batter.

Pour the batter into the prepared pan and bake for about 40 minutes or until a skewer comes out clean.

I made a 12cm cake just for the two of us

I actually love the cracks!

***

Enjoy your Sunday! I’m making some super healthy, protein-packed and nutritious soup for tonight :)
