			<content:encoded><![CDATA[<p>I was watching Oprah the other day and she showed us some top secret recipes. One of them was the <a href="http://www.oprah.com/recipe/food/recipessandwiches/20080516_tows_turkeyburger" target="_blank">Mar-a-Lago Turkey Burger</a>. The secret ingredients are diced  <strong>apples</strong> and some kind of tomato chutney which are supposed to make the burgers very moist.</p>
<p>Tonight I made my own burger but a chicken version. I added the diced apples (I shredded mine instead) but not the chutney. Voila, my giant chicken burger. It was <strong>so</strong> filling! And very yummy :)</p>

<p>I prepared everything the night before so that tonight I just needed to season and shape them. Saves time!</p>

<p>Here&#8217;s the recipe</p>

<p><strong>Chicken Burger</strong> &#8211;  adapted from <a href="http://www.oprah.com/recipe/food/recipessandwiches/20080516_tows_turkeyburger" target="_blank">Oprah</a></p>
<p><strong>Ingredients</strong></p>
<ul>
<li> 1/4 cup  thinly sliced  scallions</li>
<li> 1/2 cup  finely chopped  celery</li>
<li> 1/2 cup  finely chopped carrots</li>
<li>chopped garlic</li>
<li> 2 Granny Smith apples , peeled and diced</li>
<li> 1/8 cup    canola oil</li>
<li> Minced chicken breast &#8212; I will update the quantity used soon.</li>
<li> 2  Tbsp.    salt</li>
<li> 1Tbsp.    black pepper</li>
<li>Canola oil</li>
<li> 2  tsp.    Tabasco sauce</li>
<li> 1      lemon, juiced and grated zest</li>
<li> 1/2 bunch    parsley , finely chopped</li>
</ul>
<p><strong>Method</strong></p>
<ol>
<li>Sauté the scallions, celery, carrots and apples in the canola oil until tender. Let cool.</li>
<li>Place the minced in a large mixing bowl. Add sautéed items and the remaining ingredients. Shape into round burgers. Refrigerate for 2 hours. I prepared mine the previous night.</li>
<li>Season the burgers with salt and pepper. Place on a preheated, lightly oiled grill. Grill each side for 7 minutes until meat is thoroughly cooked. Let sit for 5 minutes. If you don&#8217;t have a grill, place them into the oven and bake for about 35 mins or until cooked.</li>
<li>Serve with your favorite toasted bread, pita or hamburger roll.</li>

I will call them <strong>Tofu Burger Cakes.</strong> I added a few extra ingredients and instead of pan frying them, I baked them as I could bake them all in one go!</p>

<p>I ate mine wrapped in a big lettuce. I loved it!  These tofu burger cakes are not only <strong>healthy</strong> and <strong>delicious</strong>, but they are also <strong>quick</strong> and <strong>easy</strong> to prepare!</p>

<p>Well I had already chopped all the ingredients since yesterday &#8211; froze half of them because I made too much even with only 2 tau kwa tofu.  Tonight I only had to combine all the ingredients together and mold them into nice round burgers.</p>

<p><strong>Ingredients</strong></p>
<ul>
<li>2 Tau Kwa Tofu (the hard ones)</li>
<li>1 green onion chopped</li>
<li>2 cloves garlic chopped</li>
<li>1 cup chopped celery</li>
<li>1/2 cup frozen corn</li>
<li>Some flour</li>
<li>Breadcrumbs</li>
<li>Salt and pepper</li>
</ul>
<p><strong>Method</strong></p>
<ol>
<li>Combine all the ingredients together except the breadcrumbs</li>
<li>Mold into round burgers and coat with breadcrumbs</li>
<li>Bake or pan-fry the burger (you can pan-fry first to brown them before baking them)</li>

<p>Tomorrow night I am making <strong>pumpkin-filled wonton</strong>. I&#8217;ve already boiled and mashed the pumpkins. So tomorrow I will just spice it up a little.</p>
