Happy Friday everyone!

I woke up to the sound of rain … Definitely no cycling to work in this kind of weather. I was secretly happy though–I wanted a little break. Plus, somebody drove me to work  :P

After a sweaty workout (ChaLean Extreme Lean Circuit 2), I made a warm bowl of oatmeal.

For 2 servings: 1/2 cup rolled oat, 2 tbsp milk powder, 2 cups of water, 1/4 cup peanut flour, 2 tbsp flax seed, cinnamon, vanilla essence, plum (topping). Sounds like a lot of liquid but the peanut flour will thicken it.

Yesterday for dinner at sis’ place … Fried rice

Buffalo (baked) chicken — one of the best I’ve ever eaten – tastier, crispier and healthier than KFC!

Salad – lettuce, cucumber, mango, cherry tomatoes with balsamic vinaigrette

Some random eats … Homemade peanut-oat protein bars (rolled oat, peanut flour, coconut flour, agave nectar, egg, cinnamon, vanilla)

Egg Cake — I didn’t know what to eat for breakfast one day. So I just took 2 eggs, added some coconut flour to it, then drizzle some agave nectar over… I always think that my palate is weird because the average person won’t like this egg cake … I do.

Fruits

Have a good day ahead!

Dr James Tan

Denial. Fear. Anger. Anxiety. Thankfulness. was what I felt in the past three weeks. Three weeks is a short period of time, yet so many things have happened in that short span of time. September 10th  (two days after my birthday) will probably be the day that changed my life. It was a normal day, [...]

Eat

Found this from  FabFitFun. The way a guy eats can be a very good way to determine the kind of person he is. Interesting …   [Image Source] The guy who sends everything back because it’s too cold, too hot, too overdone, etc.: This guy is too picky and he’ll find some reason to pick [...]

Hospital Room

This was my “bed” (couch) for the past 3 nights … Surprisingly I slept well — probably only woke up  twice during the nights. In the mornings, I would check my emails (or my YouTube subscription). I ain’t gonna miss this room, now that mum is discharged. Yeah we are back home now! And it [...]

Salad

Hi from the hospital. I awoke at 0630, showered and I’m ready for work. Will wait for the doctor first — he should be coming around 7 am. Last night I had a ginormous salad from the Salad Stop. It was my first time buying anything from there. You can’t tell from this picture but [...]

With mum and sis and niece

Hey friends, sorry for my MIA. My mum is in Singapore and I’ve been spending time with her and my siblings. She is currently undergoing a kidney surgery (as I write this).  Thanks for all your thoughts and prayers. It has been tough but we remain positive. Sometimes things in life happen that we have [...]

Spinach-cheese stuffed rolled chicken

I baked this last Saturday. I used laughing cow cheese. I froze one piece (leftovers) and had it for lunch on Wednesday I think (this one was a little burnt on top) Marinate chicken breasts in yoghurt, turmeric, some salt, pepper and crushed garlic cloves mixture overnight or for a few hours. Pound to 1/2 [...]
