Low fat rosemary bread
Hi guys. I’m going to keep this post short. I’m in bed and not feeling too good — having gas pain in my lower belly (sort of stitch pain everywhere) and I can’t really move around much. I went to the kitchen earlier on with the intention to microwave some egg whites (I even cracked some eggs) but I couldn’t stand straight, so went back to bed. I took the day off today. Well I just went to office early this morning for 2 hours to get some urgent work done.
I called the husband to get us dinner tonight. He got me Fish, fried chicken and veggie curry

Last night we ate Thai food at Siam Kitchen.
We wanted to try their Thai curry fish head. Not bad for $15. The gravy is like a thick Tom Yum gravy but wasn’t spicy enough — I love spicy food. Still yummy though!

We also ordered our favourite Thai Mango Salad

Earlier on Sunday, I baked some rosemary mini breads (sans yeast and butter). I used whatever left over buttermilk and cream cheese that I had.

Ingredients (makes 18 mini)
- 2 cups all-purpose flour
- 1/2 tsp. salt
- 3 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp dried rosemary herbs
- 1/4 cup low fat cream cheese
- 1/2 cup plain yogurt or sour cream or buttermilk
- 1/2 cup skim milk
Method: Preheat oven 200 degrees Celsius. Spray Pam on pan and set aside. In a bowl, sift flour, baking powder, baking soda, dried rosemary herbs and salt together. In a separate bowl, mix cheese, yoghurt and milk together. Pour into flour mixture and mix well. (Add a little milk if too dry.) Pat out on floured board 1/2 inch and cut biscuits. Brush some milk on top of each biscuit and bake for 18-20 minutes until golden brown.
I thought they would be very dense but they were actually light.

They are very crispy the first day, then turn soft the next day.

your rosemary bread looks great, they look like scones and i love the shape! am gonna try the recipe.
and the crackers at siam kitchen, don’t think they’re free, at least the last time i went it wasn’t. knowing i’d be charged a dollar for that, i refused it lol

Yep it does look like scones. They are actually pretty dry because no butter or oil was added. But you can always toast it and spread some cream cheese or butter on top :)
LOL, I was actually telling the husband that these crackers may not be free but he didn’t care whether free or not free :D He’s not so particular unlike me.

I took a medical leave today as well. I had a sleepless night (for more part of the night) because of the gas pain. It is much better today but still can’t do sudden movements.
