Good Friday lunch

Evening guys :)

I started off my day with a short 4 km run just to sweat it out a bit. After I came back home and showered, lunch preparation began.

I started with spinach and cheese cannelloni.

I prepared the spinach first followed by the tomato sauce and lastly the white sauce

Layer 1: Basil tomato sauce

Layer 2: Filled cannelloni shells

Layer 3 and 4: White sauce topped with shredded mozzarella cheese

Voila! My spinach and cheese cannelloni! Unfortunately it wasn’t as good as my first (recipe there), probably because I used cream cheese + cottage cheese instead of ricotta cheese + cottage cheese. And also because I added the stalks of the spinach!  I should have just plugged out the leaves like I did last time! Bahhh

Lunch also included Crispy pita chips with homemade jalapeno roasted garlic hummus. I think this was a hit. Good snack too!

How to make crispy pita chips: Slice the pita wraps (I used those sold at Fairprice as they are thinner)  into triangles, drizzle with some extra virgin olive oil, salt, pepper and rosemary herbs (or whatever herbs you prefer). Toast in the oven until golden and crispy! Be careful because they burn easily!  These were super crispy :)

And we also had baked sweet potato fries. They were not crispy anymore. Still delish though.

We had some snackies while watching TV. There were ton of fruits too (watermelon, jack fruit, guava).

Twisties, Cheezels and Homemade Apricot granola bars. I made them earlier today.

That’s the end of part 1 as this post is getting too long … Part 2 will include a last minute early birthday celebration for the husband.

    u managed to find the barilla’s cannelloni shells :D btw what spinach did u use, the chinese one? i managed to find some frozen ones, brand is EMBORG (like the whipping cream) from NTUC at amk hub, only $3+. still thinking of what to do with them.

    Yup I bought the Barilla cannelloni at Carrefour. I was looking for instant ones without the need to pre-boil the shells but couldn’t find. As for the spinach, I used the chinese baby spinach. It tastes good without the stalk. I’ve never eaten frozen spinach before … Maybe you can try making some creamy spinach :)

    yes i know, u asked me where i got the shells so i told u carrefour :p chinese baby spinach? where did u buy? i only seen english baby spinach before, not chinese ones.

    haha yes you told me :)

    You’ve never seen chinese baby spinach?? heehe. You can find them at almost any supermarket and they are super cheap ($1.10 per packet) compared to the english baby spinach ($5 ++). Same nutrional value, but of course not as green and pretty as the english spinach ehhe. I buy mine at Fairprice Sunplaza because they always seem to have them. You will find different types of chinese spinach (round, sharp etc.) but there are also those with label “baby spinach”.

    serious? i buy chinese spinach all the time from supermarkets but i thought there’s only one variety, the long ones from china. didn’t know there are baby ones, must go sunplaza and hv a look!

    hehehe, there are a few varieties. I prefer the chinese baby spinach other those round or sharp or red ones. BTW, just saw this comment as it was in the spam folder :(
