Healthy Blueberry Muffins

So glad Monday is over!

I had a very hard time getting out of bed this morning…  I almost wanted to stay in bed and continue to sleep!! However, after a nice warm bath I was more awake. My morning routine is more or less the same day after day: Wake up > bath > get dressed > feed Mikey > take multi-vitamins > pack lunch (optional) > have a quick bite > quick goodbye kiss  > leave home and walk to the train station ….

I grabbed this healthy blueberry muffin (baked yesterday. More on that later …) just before leaving the house.

Work was  … work. Just a normal day.

Part of dinner was this yummy protein-packed minestrone soup (made on Sunday for the week). I added some TVP (Textured Vegetable Protein) to the soup.

TVP has a similar texture to ground meat when cooked. It is pretty good.

I also made simple veggie spring rolls – FINALLY!! The filling was prepared last night.

I’m not good at rolling spring rolls! It was a tedious process :D  Oh by the way, these are BAKED spring rolls! Despite the uncooked look, they tasted pretty good. The skin was quite crispy! You can’t tell by this picture but they were.

Now on to the Healthier Blueberry Muffins! I found the recipe via ActiveGal and since I had a handful of blueberries on hand, I decided to give it a try.

The recipe uses “mix wet and dry ingredients” method – I like this method because it is faster and neater. And less dish washing afterwards too :) Let the pictures do the talking …

They are dense muffins, not too sweet and they keep you satisfied.  I’m not freezing any because I halved the recipe and got 6 muffins which are enough for breakfast this week!

Healthier Blueberry Muffins via ActiveGal

Ingredients:

  • 1 1/2 cups all purpose flour
  • 2/3 cups whole wheat flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fat free milk
  • 1 large egg
  • 2 tbsp butter (I used canola oil)
  • 2/3 cups natural apple sauce
  • 1 cup blueberries (fresh or frozen)

Method

  1. Preheat the oven to 400 degrees fahrenheit.
  2. Combining all the wet ingredients into a small bowl. Whisk until smooth.
  3. Combine all of the dry ingredients together including.
  4. Combine the wet and dry ingredients and mix. DO NOT over-mix.
  5. Slowly fold in the blueberries.
  6. Put the muffins in the oven and bake for around 20 minutes, or until golden brown.
  7. Remove from the oven and let cool for about 5-10 minutes before serving.

Makes 12 small muffins

    i love how your blueberry muffins look! i dare say they look like the best i’ve ever seen, very pretty with the berries oozing out, forming crisscross lines! and i’m gonna buy the textured veg protein, where did u get it? i’m thinking it must taste abit like the wheat gluten commonly sold in cans (with braised peanuts) for eating porridge with.

    Your blueberry muffins look gorgeous. I love berries of any kind; I can only buy frozen ones here. Wish I could grow my own but dnt have space for it. For now I only grow herbs on my rooftop! Btw I’ve got identical spring roll wrappers waiting to be used but I’m too lazy to make them :) Have a nice day!

    Thanks :) Didn’t place the berries in any particualar way, so it was a nice surprise too :)

    Yup I got the Bob’s Red Mill TVP at threesixty. I’m looking for quinoa now … Couldn’t find at MarketPlace Paragon yesterday …

    I really want to grow herbs but plants and me don’t seem to get along :D They always die under my care! I’ve tried thyme, basil, rosemary … no luck!

    I don’t think I’m gonna bake more spring rolls… don’t like the rolling part!! Wondering how to use the left over 30+ spring roll wrappers …. any ideas?
