Sweet potato fries
Afternoon all.
So I’m back to work after 5 days of rest. Surprisingly I was able to get up even before my alarm went off. In fact I woke up two to three times during the night. Guess what!? We don’t work tomorrow (Friday)!! :) But gotta go on Saturday as we have a company lunch.

Bread with curried aubergine

Bread with crunchy PB. In case you don’t know, I’m a fan of bread <3 <3

I baked sweet potato fries yesterday. Ahhhh very delicious!

Ingredients (serves 2)
- 1 sweet potatoes (I didn’t use the japanese ones), peeled and cut into 1/2-by-2-inch sticks
- 1 tablespoons olive oil
- Coarse salt and ground pepper
- Other favourite spices like paprika or rosemary
Method
- Preheat oven to 225 Celcius.
- Toss potatoes with oil, and season with salt and pepper. Arrange in a single layer, without overlapping.
- Roast, tossing once, until tender and starting to brown, 25 to 30 minutes.

i’m gonna give these a try! they resemble my favorite calbee’s jagabee snack. maybe i could use the purple sweet potato too, for the color. thx for sharing the recipe.

They aren’t as crispy as calbee’s jagabee snack. Maybe if you cut them thinner they will be more crispy … I have never tried with the purple sweet potato (which is the Japanese potato right?). I was looking for the normal sweet potato and I finally found some at Carrefoure.

yep the purple sweet potatoes are the japanese kind, need to get them from the wet market.
