A slow day …
Evening all!
Today I started off my day with some strength training. Waking up at 6am is not easy these days because we don’t sleep early anymore — 11pm or midnight at most. After working out, bathing, getting ready for work and feeding my cat (all done within 45 min), I ate breakfast. I had a ripe mango, my daily vitamins and on my way to work I bought a cup packet of tea and a spring roll (remember, I am loving these lately). Ah, I bought spring roll wrappers yesterday. Guess I gotta make my own soon!
The day went on pretty slow and boring… I was tired and sleepy due to lack of sleep and I kept looking at my computer clock. Lunch was Yong Tao Fu.

Finally it was time to pack and go home.
Working out in the morning was a good idea because I had ample time to prepare dinner after I came back home (7pm usually). I even did a quick grocery shopping!

Didn’t buy a lot of things though:
- Frozen chapatti
- Canned mushrooms
- Corn
- Cucumber
- Apple
- Mangoes
- Chicken frank
I want to make Chapatti sausage rolls with the frozen chapatti and chicken frank one of these days.

I made a tropical fruit salad with the fresh apple, mango (I used one only) and cucumber

And made something nice with the corn, mushroom and tomato. I don’t know what to call it! It was spiced up with Cajun chicken spice and pepper. Delicious! Fried egg as a side.

Do you see my cat at the bottom left? He was trying to get some of the food :)

Will I wake up at 6am tomorrow? Hmmmm maybe! … If I get enough sleep tonight that is …
Off to watch some TV now (Just for laugh Asia — SO funny). It’s still early (8.40pm). Enough time to enjoy the rest of the evening :) Goodnight all!

The fruit salad looks really good! You inspired me to get some mangoes on the weekend too. :P

Homemade spring rolls are so good. The only annoying part is the rolling process especially if you have a lot of spring rolls to do! Hmm, now you make me wanna prepare some spring rolls too :p
Wow the fruit salad looks very refreshing. What did you add to it? Sugar and salt?

@ Angele: I’ve never made my own spring rolls. I’ve bookmarked couple of recipes. Now my turn to try…
I added some lemon, apple cider vinegar and salt to my salad. A little bit of sugar too…
