Green brunch

Posted on Sunday, January 3rd, 2010 by admin  |  2 Comments »

I haven’t eaten too much green lately.  So this morning I decided to make myself a salad. It was awesome! I’m making more for dinner later with some grilled cheesy toasts!

For the salad

  • Feta cheese
  • Canned tuna
  • Lettuce
  • Tomatoes
  • Carrots
  • Jalapeno peppers
  • Bacon bits for the extra crunch

You can add mixed seeds, raisins, dried cranberries etc. etc. You can use smoked chicken instead of tuna too.

Tangy Mustard Dressing

  • 1 Tb. honey or agave
  • 2 tsp. dijon mustard
  • splash lemon juice
