Peanut butter filled cocoa oat balls

I turned thoseĀ  …

… into these peanut butter filled cocoa oat balls. They are like rocks.

I made a bar version too … But I prefer the mini balls.

Here’s the recipe

Ingredients

  • 3/4 to 1 cup peanut butter (plus more for the filling)
  • 3/4 cups honey (or corn syrup)
  • 1/3 cup butter or margarine at room temperature
  • 2 tbsp vanilla extract
  • 3 1/3 cups rolled oat
  • 2 tablespoonful cocoa powder
  • 1/2 cup flaked coconut
  • 1/2 cup pumpkin seeds or sunflower seeds or other nuts of your choice
  • 1/2 cup raisin (optional)
  • 1/2 cup semi sweet chocolate chips (optional)

Method

  1. Preheat oven 170 C
  2. In a large bowl, stir together peanut butter, butter, honey and vanilla until smooth
  3. Add the rest of the ingredients and stir well
  4. Place some into your palm, add a little bit of peanut butter in the middle. Close and shape into mini balls (smaller than the size of a golf ball)
  5. Place the balls into a greased tray
  6. Bake for about 20-25 mins

Note: You can also coat those mini balls into your favourite chocolate sauce
