Peanut butter filled cocoa oat balls

… into these peanut butter filled cocoa oat balls. They are like rocks.


I made a bar version too … But I prefer the mini balls.

Here’s the recipe
Ingredients
- 3/4 to 1 cup peanut butter (plus more for the filling)
- 3/4 cups honey (or corn syrup)
- 1/3 cup butter or margarine at room temperature
- 2 tbsp vanilla extract
- 3 1/3 cups rolled oat
- 2 tablespoonful cocoa powder
- 1/2 cup flaked coconut
- 1/2 cup pumpkin seeds or sunflower seeds or other nuts of your choice
- 1/2 cup raisin (optional)
- 1/2 cup semi sweet chocolate chips (optional)
Method
- Preheat oven 170 C
- In a large bowl, stir together peanut butter, butter, honey and vanilla until smooth
- Add the rest of the ingredients and stir well
- Place some into your palm, add a little bit of peanut butter in the middle. Close and shape into mini balls (smaller than the size of a golf ball)
- Place the balls into a greased tray
- Bake for about 20-25 mins
Note: You can also coat those mini balls into your favourite chocolate sauce
