Mauritian style Prawn Egg Fu Yung

This is one of our Mauritian Chinese dishes. Some people prepare it differently.

Ingredients

  • 3 to 4 eggs (I only used 3 eggs, you can add more)
  • Prawns (about 12 big prawns)
  • 1 large onion
  • Bamboo shoot (optional)
  • Dried mushrooms, chopped into pieces
  • Salt or soy sauce or fish sauce
  • Chopped coriander

Method

  1. Marinate the prawns with some corn flour and salt (or soy sauce or fish sauce). Stir fry them and set aside.
  2. Beat eggs in another bowl.
  3. Stir fry the sliced onions, bamboo shoots and dried mushrooms.
  4. Add the prawns to the onion mixture
  5. Add egg to the mixture and allow to cook. Do not overcook.
  6. Sprinkle some chopped coriander over.
  7. Serve immediately.

    The one my mum makes is a bit different and I don’t even remember all the ingredients in the dish but I know that she always uses bamboo shoots.

    I too use bamboo shoot. But i never think of using onion. Must try it one day.

    What a coincidence! My friend and I were talking about how to make prawn fu yung this afternoon. Hehehe.
    I think my mom also adds shredded carrots when she makes fu yung. I’m not sure. Haven’t eaten that dish in a long time!

    I dont eat prawn :S I the only animals I eat are chicken, beef and pork :S

    I think your version is more the Hakka version, isn’t it? I prefer the Cantonese version: egg, shrimp and onion. Nothing else.

    Maybe I’m a purist. I don’t like to change some recipes. For example, I prefer my steak medium rare with just salt and pepper only.
