Soup on a Sunday
What could be better than having a delicious homemade healthy curried pumpkin carrot celery soup for brunch on a Sunday!
I had carrots, pumpkin and celery that I needed to use before they start to deteriorate. So I made a soup! A very healthy one, without any oil or dairies added. Two weeks ago it was a healthy vegetable chowder.

I didn’t follow any recipe as this soup is straightforward to make. Just dice the celery, carrot and pumpkin into big chunks. Then boil them until tender. Once they are tender place them all in a blender or food processor. Then add the seasonings – salt, pepper and curry powder. You can add other stuffs too. And the taste? Simply delicious! I’m happy when I see him eat all these hidden vegetables :)
Guess what I made next?

Waffles! I used the recipe from the link that Angele sent me but changed it a little bit. I also added some semi-sweet chocolate chips to my waffle batter. Oh my … it was lovely. The chocolate filling oozes out when you bite! The waffles were very light and fluffy too because I’ve separated the whites from the yolks.

With all those carbs in my blood (including yesterday’s rice), I was definitely ready for my 23 km run this afternoon! Burn baby burn! I made sure that I drank plenty of water prior to my run as I didn’t want to feel dehydrated like last week.

Although the sun was hiding behind the clouds most of the time, the weather was still warm when I started to run at 3.50 pm. The run was good. Every steps that I took felt great! After my run I cleaned the house as I didn’t have time to do it yesterday. Well I only vacuumed, mopped and threw away stuffs that have accumulated over the past week. The husband is working out at the back of our place right now.

I had a turkey breast sandwich just now. This will be tomorrow’s lunch too! Bought this smoked turkey breast from Carrefoure the other day. For only 25 kcals per slice, it tastes great!
Here’s the recipe for the waffle and a couple of more pics.

Ingredients (Makes about 6 waffles)
- 1 and 3/4 cups all-purpose flour, sifted
- 2 tsp baking powder + 1/2 tsp baking soda (bicarbonate of soda)
- 2-3 tbsp sugar
- 1/4 tsp salt
- 3 beaten egg yolks
- 1 and 3/4 cups milk
- 1/2 cup vegetable oil
- 3 egg whites – beaten stiffly
- Vanilla essence

Photo above: I was initially planning to make lemon waffles. That’s why there’s a lemon in the picture. I also had only 1 egg left when I took this picture.
Method
Mix all dry ingredients (except the sugar).
Combine yolks, milk and vanilla.
Stir into dry ingredients. Do not over mix.
Stir in oil and mix.
Beat the egg whites with the sugar until stiff.
GENTLY fold in beaten egg whites, do not over mix.


Adding some semi-sweet chocolate chips to the batter.

I like vegetable soups. I would usually buy a lot of veggies mostly pumpkin, carrots, onions, celery, potatoes… etc, boil them and blend the veggies all together. Yumm yumm!
I was supposed to make waffles today for brunch but in the end, I decided not to! Last night I went to my cousin’s birthday party and I had a lot to eat. So much that I still felt heavy when I woke up this morning. I didn’t feel like having waffles today… too much calories in a row!
Chocolate chips in the waffle batter is a great idea. I’ll try that next time. So, what do you think? These waffles tasted better than the previous ones, regardless of whether you added chocolate chips to the batter?

I’m going to make these kind of soups where you just blend everything together pretty often. Definitely yummy right! And it’s a good way to have him eat lots of vegetables. Have you tried adding curry powder to your soups? They taste good. I used the mauritian curry powder today.
I didn’t feel like preparing waffles today but I really wanted to try that waffle recipe you sent. Plus the husband also felt like eating waffles again :) We ate a few and I have frozen the rest so that we can have them again some other day!
Yeah the waffles tasted better and were much fluffier and lighter than the ones I made other day! I didn’t use my electric mixer in the end. As I was manually beating the egg whites, I asked myself why I didn’t use the mixer in the first place! haha
Yes try the chocolate chips. The waffles will be lovely :)

No I have never used curry powder in my soups. I always add salt and pepper only. I will add some curry powder along with the salt and pepper next time =)
Haha! I told you that beating egg whites manually results in aching arms! Lol
Have you ever made creme brulée? I wanna try making home made creme brulee ^^

No I have never made creme brulee. Have you? I wanted to make last time with my leftover egg yolks but till now I haven’t. I’ve only made creme caramel. I don’t have the blow torch to make the nice burnt effect on top.

I have never tried making creme brulee but I want to. It’s ok if you don’t have the blow torch I guess. I don’t either. Lol. But I watched a tv show the other day and the guy put his creme brulee under the broiler instead of using the blow torch. The result was the same hard caramelized topping. He said that if we don’t have the torch at home, the broiler will do just fine.
I like creme brulee. It’s not heavy and it tastes nice =)

I have never had creme brulee :P but I’ve heard how delicious they are and I saw quite a few chefs on tv showing us how to make them. Creme brulee has a lot of egg yolks eh :)

Yeah creme brulee is delicious ^^ Some people say it tastes like the typical creme caramel but I think it tastes so much better. Creme brulee has egg yolks in it yeah but I saw a recipe that uses 3 egg yolks only… which is quite reasonable :P

I saw a couple of low-fat creme brulee but I guess I should try the original version before trying the low-fat version :) There’s one that uses yolks, sugar, vanilla and whipping cream. I may try it this weekend (maybe) because I already have those ingredients at home.

Try to use vanilla bean instead of vanilla essence. Vanilla pods definitely add more aroma to the creme brulee :)

I’ve never used vanilla bean, have you? Yeah pods are definitely better but more costly. Not all supermarkets have them here. Are they readily available in Mauritiua? Speaking of vanilla, yesterday I dropped by a bakery store and got myself a small bottle of vanilla essence. I think I should get the big bottle next time as I use vanilla quite often!

And this morning I was looking at the number of calories from the 200 ml whipping cream box that is in my fridge. 700 kcal (and 72 g fats) in just 200 ml of whipping cream ma chere! And the creme brulee recipe that I saw asks for about 500 ml of whipping cream! hahaha. I think there are other versions that use milk instead of whipping cream!

Vanilla pods are available in a lot of stores in Mauritius but they are a bit expensive.
Once my cousin brought some from Reunion island and I took a pod and placed it in my sugar jar… to make vanilla sugar. Hahaha! But I have never used vanilla beans while baking. If I prepare creme brulee, I’ll make sure to use vanilla pods though. I wanna feel the aroma of pure vanilla in my creme :P
*shocked* So many calories in 200 ml cream? :o Oh my god, then if you add the amount of cream required for the creme brulee along with the egg yolks and sugar… that makes a very very rich dessert :|

How much do vanilla pods cost in Mauritius? If it’s cheaper, I will ask my parents to get some for me when they come over.
Oh yeah, can make vanilla-flavoured sugar with the pods.
Let me double check the nutritional content of that whipping cream when I get back home later :P Maybe I made a mistake but I’m pretty sure that’s what I saw hehehe.

Angele, I’ve double checked and they are indeed 700 kcal per serving! The small container (200ml) is one serving.

That’s definitely a lot of calories for just 200ml of cream :O
I saw a few recipes that use whole milk instead of heavy cream but I wonder if the creme brulee tastes as good.
